Serves 30 (in champagne flutes or coupes)
3 c frozen peaches1 ½ c sugar3 T lemon juice (I use Organic Volcano)3 750ml bottles (3.17 cups in a bottle) prosecco, water as needed
Whiz frozen peaches with sugar and lemon juice in a high powered blender until the texture is smooth, using water to thin if needed . Transfer the mixture to a gallon container. Directly before serving, add bottles of sparkling wine. Shake the mixture to blend and serve in a lovely pitcher. This drink is best without ice, but if you love ice, go for it!
Alternately, blend peach mixture and freeze in cubes (makes 36 cubes). Remove from freezer and place cubes in a pitcher until the pitcher is filled halfway with peach ice. Cover with prosecco and serve!
