Lavender Collins Syrup
make 8 pints
8 c water6 c sugar5 cups lemon juice1 c dried lavender (available at most health food stores near the essential oil)
Make the syrup: Combine water, sugar, and lavender in a large saucepan with wooden spoon until sugar dissolves and mixture comes to a rolling boil. Reduce heat and simmer 7 minutes. Remove from heat and cool for 5 minutes. When cool, strain flowers through a fine mesh sieve twice and combine with lemon juice in a gallon jug. Pour into individual jars and store in refrigerator for up to two weeks or use immediately.
Serving Suggestion: Mix equal parts Syrup, Gin, & Sparkling Water and serve over ice! This recipe works well in a pitcher for multiple guests or individually in a rocks glass.
New Year’s Eve gift for the host: It’s fun to bottle syrup in a cute jar, tie the directions on with a bit of twine (for label: Lavender Collins Syrup: Mix equal parts Syrup, Gin, & Sparkling Water and serve over ice! Refrigerate for up to 2 weeks) and gift with a small bottle of gin and club soda.
