Mojitos in the Winter? Why Not! Mint is always available in bulk at the grocery.

Serves 20 (in a 10 oz. rocks glass filled halfway with ice)
2 c. brown sugar (not packed)3 c. lime juice2 oz. mint (3 cups if using a measuring cup)2 750 ml dark rum (two bottles)4 1/2 c club soda3 limes, sliced
In a glass measuring cup, combine brown sugar and mint. Muddle (pound and combine) with the back of a wooden spoon for one minute. Turn spoon around and stir mint and sugar together, then muddle again with the back side of the spoon for another minute. Don’t skimp on the muddling! Add 3 cups lime juice and muddle for two more minutes. Add the lime, mint, and sugar combination to a gallon container and then add the rum. Shake well to combine. Immediately before serving, add 36 ounces club soda. Serve over ice with lime slices for individual drinks and enjoy!
