HAPPY NEW YEAR!
Lark is all about eating clean during the week and splurging (going out On a Lark) on the weekend. After rich Holiday food has been over-consumed, I crave citrus and green, fresh and sparkling. The Paloma fits the description completely!
Week 9 • Virgin Paloma
Serves 20 (in 10 oz. rocks glasses, filled halfway with ice)
1 ½ c lime juice (I like Nellie & Joe’s Key Lime)5 c 100% white grapefruit juice1 ½ c agave nectar½ t salt8 c club soda½ t fine grain salt2 limes, for serving
In a gallon jug (using a funnel), pour in 1 ½ c lime juice, 5 c white grapefruit juice, 1/2 t. salt and 1 ½ c agave nectar. Place cover on jug and swirl awhile until agave nectar dissolves. Right before serving, carefully add 8 c club soda, cover jug, swirl again, and pour into a serving pitcher or punch bowl. Garnish with sliced limes and serve ice on the side.
