Best Banana Bread GF • DF
Makes one 9 x 13 pan
⅔ cup melted coconut oil or canola oil
⅔ cup honey
4 eggs (at room temperature)
2 T white vinegar
⅔ c milk of your choice (at room temperature)
2 cups mashed bananas (7 over-ripe bananas)
½ cup ground flaxseed
1 cups ground whole oats (into flour)
½ cup almond flour
1 ½ cups gluten free flour (Lark Loves Bob’s Red Mill 1 to 1)
2 teaspoon baking powder
1 teaspoon baking soda
1/2 teaspoon salt
1 t vanilla
In a large stand mixer combine oil and honey. Crack eggs and vinegar into a large measuring cup and stir with a fork until combined, add to the mixer and stir with paddle attachment. Add milk and bananas and mix again. Combine the rest of the ingredients and mix until just combined. Pour into two greased bread pans or one greased 9 x 13 pan for 45 minutes at 350.
