Batch Mojitos
Serves 20 (in a 10-ounce rocks glass filled halfway with ice)

2 cups brown sugar (not packed)
3 cups lime juice
2 ounces mint (3 cups if using a measuring cup)
2 (750 milliliter) bottles of dark rum
4 ½ cups club soda
3 limes, sliced 

  1. In a glass measuring cup, combine brown sugar and mint. Muddle (pound and combine) with the back of a wooden spoon for one minute. Turn the spoon around and stir mint and sugar together, then muddle again with the back side of the spoon for another minute. Don’t skimp on the muddling!

  2. Add 3 cups lime juice and muddle for two more minutes.

  3. Add the lime, mint, and sugar combination to a gallon container, and then add the rum.

  4. Shake well to combine.

  5. Immediately before serving, add 4 ½ cups (36 ounces) club soda.

  6. Serve over ice with lime slices for individual drinks and enjoy!
