Lavender Raspberry Jam Mojito (for Bourbon Drinkers!)
Serves 10 (in 10-ounce rocks glasses, filled halfway with ice)
6 cups bourbon
2 cups brown sugar
2 cups lime juice
10 sprigs mint (about 80 leaves), muddled
1 cup Cellar Door Raspberry Jam with Lavender
1 cup club soda
1 five-ounce bottle Scrappyβs Seville Orange Bitters, added individually to each serving over ice.
Muddle the mint (leaves pulled off the stem) with lime juice and sugar in a medium glass measuring cup, pounding and muddling mint leaves with the back of a wooden spoon for a few minutes until juicy and mixed well.
Add raspberry jam and 2 cups of bourbon and stir to mix again.
With a fine-mesh sieve, strain out raspberry seeds and mint leaves over a 12 cup or larger container.
Add the additional 4 cups of bourbon and the club soda. Mix well and encourage guests to pour their own cocktail over ice with a garnish of mint and 1 teaspoon bitters.
