Caipirinha
Serves 4 (in a 10-ounce rocks glass filled halfway with ice)
½ cups sugar
1 lime, cut into 8 wedges
⅓ cup lime juice
3 cups cachaça
1 ½ cups club soda
In a small pitcher, and with a wooden spoon, muddle ½ cup sugar with all of the lime wedges until juicy (about one minute).
Add lime juice and stir well.
Transfer this mixture to your gallon serving container, add 3 cups cachaça and stir more. You may have to stir longer than you think you should!
Right before guests arrive, add 1 ½ cups club soda and stir well again. Saude! (That’s cheers in Portuguese, guys.)
