The French 75 is a winnerβpopular with large groups and one of my personal favorites. I decided to add tarragon to the classic simple syrup because it is married to all things French anyway.
French 75 en Masse
Serves 20 (in champagne flutes)
2 cups sugar
2 cups water
2 cups lemon juice
6 tarragon sprigs
3 cups gin, chilled
2 Β½ bottles (7 cups) dry champagne or sparkling wine, such as Mawby Green
Sparkling water to taste
Make a lemon simple syrup: Combine lemon juice, sugar, and water in a small saucepan; bring to a boil. Reduce heat, simmer for 4 minutes or until sugar is dissolved. Add tarragon and steep for 3 minutes, then remove tarragon and discard. Remove from heat and chill.
Combine lemon simple syrup with gin, add champagne slowly, and stir.
Garnish with a few sprigs of tarragon in the pitcher.
This drink really is good without ice, but if it gets too warm, serve with ice on the side so guests can chill it a bit. Have sparkling water available for guests who want to lower the AVB a bit and lighten the drink.
