Lark Granola (V, GF, DF)

No frills here! I make this granola about once a month, and the whole family loves it. Family members can then add dried or fresh fruit or miscellaneous seeds to their own bowl, but it starts out plain for those who like it that way.

This recipe is vegetarian, gluten-free, and dairy-free.

Lark Granola
(makes approximately 14 cups of granola)

 ¾ cup grapeseed or coconut oil (my kids prefer grapeseed)
½ cup honey
¼ cup molasses
1 teaspoon cinnamon
1 teaspoon salt
¼ cup water
1 tub whole oats (2 pounds 10 ounces)
1 cup chopped walnuts
1 cup pecans
½ cup ground flax seed
¼ cup sesame seeds

  1. In a large pan (I use a turkey roasting pan—the high sides prevent spills) combine oil, honey, molasses, cinnamon, salt, and water.

  2. Preheat the oven to 300 and melt ingredients together until bubbly, stirring after 5 minutes, then allowing mixture to bubble and boil again.

  3. Stir dry ingredients into a wet mixture (in the pan) until fully combined.

  4. Return the pan to the oven and bake for 40 minutes, stirring thoroughly every 10 minutes.

  5. Cool and store in a tightly sealed container.
