The Lavender Collins is my personal favorite. I’m actually a bit surprised by this, as it is flowery and sweet, two things that aren’t my preference in drinks but ARE my favorite in this drink. The flavors mix in such a way that they just SING together. If you think this is impossible for you to like, you whiskey-drinking Lark fan, think again!
Lavender Collins
Serves 20 (in a 10-ounce rocks glass, filled halfway with ice)
5 cups gin
2 cups lemon juice (I like this kind)
1 cup water
2 cups sugar
3 tablespoons dried lavender
7 cups club soda
Fresh lavender sprigs (optional)
First, make the Lavender Syrup:
Bring 1 cup water, 2 cups sugar, 3 tablespoons fresh or dried lavender to a boil, stirring with a wooden spoon until sugar dissolves. Reduce heat and simmer for 5 minutes.
Remove from heat and cool for 15 minutes.
When cool, strain flowers through a fine-mesh sieve TWICE.
Store in the refrigerator in a Mason jar or use immediately.
Second, mix all ingredients:
Mix 5 cups gin, 2 cups lemon juice, and 1 ¾ cups lavender syrup.
Add 7 cups of club soda right before serving.
Serve over ice and garnish with fresh sprigs of lavender if you live somewhere warmer than I do and they are growing in your garden!
