Power Bites (2 Ways)

These recipes represent the Lark mission of eating clean all week and splurging on the weekend! These darlings keep me going during the week, while I strive to eat clean and keep my energy high for the demands.

Both recipes are vegan, gluten-free, and dairy-free.

Lark Peanut Butter Bites (V, GF, DF)
Makes 60 1 ½ inch servings

16 ounces honey
16 ounces natural creamy peanut butter
4 cups whole oats (if using oat flour, use 3 cups oat flour)
2 cups Rice Krispies®
½ cups chocolate chips
1 cup M&M’s candy (optional, of course)

  1. In a blender or food processor, grind oats until powdery like a flour, 1 to 2 minutes on high.

  2. In a stand mixer or large bowl, combine honey and peanut butter until you have one smooth paste. Add oat flour and stir until mixed. Add Rice Krispies and stir gently until combined.

  3. Combine with chocolate chips and M&M’s. Using your hands, roll into 1 ½ inch balls (size of one small ice cream scoop).

  4. Refrigerate—these are best eaten cold! Freezes well.

 

Clean Almond Butter Bites (V, GF, DF)
Makes 60 1 ½ inch servings

 20 ounces honey
16 ounces natural creamy almond butter (I like Barney Butter found at Thrive Market)
4 cups Spera Tiger Nut Flour
½ cup white sesame seeds
2 tablespoons ground flaxseed
½ cup golden raisins
¼ cup flaked coconut
¼ cup cacao nibs

  1. In a stand mixer or large bowl, combine honey and almond butter until you have one smooth paste. Add tiger nut flour and stir until mixed.

  2. Add sesame seeds, ground flaxseed, golden raisins, cacao nibs, and coconut. Using your hands, roll into 1 ½ inch balls (size of one small ice cream scoop).

  3. Refrigerate—these are best eaten cold!
