On a road trip to New York City, I picked up new inspiration for Lark Cocktails. Our Airbnb in New Jersey was a great home base from which to see the Manhattan skyline, swim in the rooftop pool, and teach the kids all about public transport (the PATH train, the subway, ferries, and yes, Lyft.)
In between trips to the Central Park Zoo and the Museum of Natural History, ramen noodle shops, and famous bagel joints, I saw lots of signs for wine spritzers and dry wine cocktails. I was too busy feeling guilty for not packing granola bars and tying shoelaces to drink many, so once we arrived home, I created a drink with the same idea (and hope for cool refreshment!) in mind. This summer sipper fits many requests I get for a no-prep drink that you simply pour and serve. Here it is!
The Rosé All Day Gimlet
Serves 20 (in a 10-ounce rocks glass filled with ice)
4 cups gin (I prefer Tanqueray Rangpur in this cocktail)
4 cups Rose’s Sweetened Lime Juice (buy the 1-liter size, ideally)
8 cups dry rosé wine
3 long stems of mint—no need to pluck leaves from the stem, just clean and place in serving container (optional)
3 limes, cut into wedges
Combine gin, lime syrup, and wine in a one-gallon jug.
When ready to drink, pour into a serving pitcher and garnish with mint in the serving vessel and a few lime wedges.
Serve with extra lime wedges on the side for individual glasses.
