The Sunday Pancake (V)

During the week, I use Spera Food’s Tigernut Pancake & Waffle Mix, but on the weekend we make this recipe from our friend Rob. He stirs together a huge batch and just keeps flipping until everyone is awake. My kids adore the flavor of this one—and it’s worth the Living LARK splurge! Hint: BUTTER BUTTER BUTTER BUTTER!

This recipe is vegetarian.

The Sunday Pancake
(makes 12 large pancakes)

1 egg
¼ cup melted butter
1 ½ cups vanilla yogurt (or plain—whatever you have on hand will work)
1 ½ cups milk
2 cups flour
3 tablespoons sugar
2 teaspoons baking powder
1 teaspoon baking soda
½ teaspoon salt

  1. Mix in the order listed and cook on a buttered griddle. Flip the pancakes when the edges get bubbly and golden brown on the opposing side.

  2. Serve with more butter and loads of real maple syrup. My friend Shanna always warms up the syrup, but I don’t take the time for things of the sort.
