Vodka Pops
Makes 20 popsicles in
these molds

For the cocktail:
1 cup vodka (Lark Loves Coppercraft)
½ cup Cointreau
1 cup thyme simple syrup (recipe below)
1 cup lemon juice
1 ½ cups water

For the thyme simple syrup:
½ cups sugar
3 cups water
10 sprigs thyme
2 fresh figs (quartered) or ½ cup frozen figs or ½ cup sliced dried black mission figs

Make the thyme simple syrup:

  1. In a small saucepan, combine sugar and water. Boil over low heat, then turn down heat and add figs and thyme.

  2. Simmer for 5 minutes on low, then cool for 5 minutes.

  3. Remove figs and thyme. Strain over a glass measuring bowl until ready to use.

Make the pops:

  1. Combine ingredients in a large container with a spout. (I prefer my blender pitcher because it has a large capacity and pours well.)

  2. Working with one popsicle mold at a time, open the top of the popsicle mold, place a small funnel in the top, and slowly pour ingredients in until liquid is 1 inch away from the top.

  3. Repeat with all 20 molds and freeze overnight.
