The Wilderness Road Gimlet
Serves 6 (in a 10-ounce rocks glass filled with ice)
2 cups Scout and Cellar Wilderness Road
¾ cup lime simple syrup
1 ¼ cups club soda
1 lime, cut into wedges
Make a lime simple syrup:
Combine ½ cup water, ¼ cup sugar, and ¼ cup lime juice in a small container and microwave for 2 minutes until boiling and combined.
Make the cocktail:
Combine Wilderness Road and cooled lime simple syrup in a small pitcher.
When ready to drink, pour club soda into the cocktail and serve with extra lime wedges on the side for individual glasses.
